Giant Tofu Lemon Soufflé
Our silken tofu makes a delicious base for desserts — like this sweet and citrusy lemon soufflé.
Makes One 10-in Soufflé. Serves 10-12.
INGREDIENTS
CRUST
1/2 cup sugar
1/2 + 1/3 cup butter
2 cups all purpose flour
FILLING
1-1/2 cup Island Spring Organic Silken Firm Tofu
1 can sweetened Condensed Milk
4 egg yolks
2 Tbs cornstarch
1/4 tsp lemon extract
4 Tbs fresh lemon juice
4 egg whites
INSTRUCTIONS
Preheat oven to 375F.
Grease bottom of spring form pan and dust with flour. Blend crust ingredients with fingers.
Spread the dough over the bottom of the 10-inch springform pan and press lightly with your palm. In a food processor, blend the first 6 ingredients of filling until very smooth.
Beat egg whites until stiff. Pour tofu mixture over egg white and mix gently with a rubber spatula.
Pour filling into crust. Bake on the lowest oven rack for about 60-70 minutes. Let cool in the pan.
