Island Spring Torta

A spicy Southwestern sandwich recipe using our Santa Fe Tofu Strips, perfect for a quick lunch!

INGREDIENTS

½ Package Island Spring Santa Fe Strips

2 Rolls Torta or Ciabatta

2 T Mayonnaise

2 T Refried Beans, warmed through

½ Ripe Avocado, cut into slices

2 Slices Oaxaca or low moisture Mozzarella cheese

2 T Pickled jalapeño peppers (optional)


INSTRUCTIONS

  1. Bake Island Spring Santa Fe Strips per the instructions on the bag.

  2. Cut rolls in half and toast to your liking.

  3. Spread 1 T mayonnaise on one half each roll, and 1 T of refried beans on the other half. Layer one side with avocado, cheese and jalapenos, if using.

  4. Cut the Island Spring Sante Fe Strips in half and place on the sandwich. Top with the other half of the roll and enjoy!
